Papad Vegetable Recipe | Dahi Papad Sabzi | Papad Curry with detailed photo and video recipe. it is a popular, easy and healthy Rajasthani curry recipe which is prepared mainly with papad in curd based curry. It is mainly served with roti or bajra roti and can also be served with jeera rice and pulao dishes.


Papad Vegetable Recipe | Dahi Papad Sabzi | Papad Curry with detailed photo and video recipe. generally papad curry recipe is prepared with fried papadums in a sautéed yellow colored gravy, which mainly consists of fresh curd and spices. It is one of the popular Rajasthani dishes and is mainly prepared during the dry season. Vegetable is not available in dry season and hence prepared without vegetables.


However, there is also a Bengali version of papad ki sabzi which is prepared with vegetables as well. In other words, it is an extended version of Dahi Papad Sabzi with tomato and mashed potatoes. In Bengal it is known as paporerdala or Bengali papad curry and is mainly served with rice. Also you can find sweetness with the Bengali version as sugar or jaggery is also added to it. however in this recipe post i have followed the rajasthani version and you can add mashed potatoes after sauteing the onions and sauteing the tomatoes.


This is one of the easiest curry recipes yet I would like to share some tips and suggestions for this papad ki sabzi. Firstly, adding onions is completely optional. And whisk the curd well. Make sure to keep the flame low. Lastly, stir the curd mixture continuously and add salt only after boiling. Otherwise there are chances of curd curdling. Lastly, add salt accordingly, as the papad already contains salt.

Easy Papad Vegetable Recipe | Dahi Papad Sabzi | Papad Curry


Material

      • 4 tsp oil
      • 1/2 tsp mustard
      • 1/2 tsp cumin
      • 1/2 pinch hing
      • 1/2 some curry leaves
      • 1 onion (finely chopped)
      • 1 tsp ginger-garlic paste
      • 1/2 tsp turmeric
      • 1 green chili (slit)
      • 1 tsp Kashmir red chili powder
      • 1/2 tsp coriander powder
      • 1 cup water
      • 1 cup curd (whiskered)
      • 4 papads (urad/lijjat)
      • 1/2 tsp salt
      • 1/2 tsp garam masala
      • 1 tsp kasoori methi / dry fenugreek leaves (crushed)
      • 2 tbsp coriander leaves (finely chopped)



Instruction


  1. firstly, heat 4 tsp oil in a kadhai and add tsp mustard, tsp cumin, pinch hing and few curry leaves.
  2. Further add 1 onion and saute well.
  3. Add 1 tsp ginger-garlic paste and 1 green chili. Saute well.
  4. additionally, add tsp turmeric, 1 tsp chilli powder and tsp coriander powder.
  5. Saute on low flame till the spices become fragrant.
  6. Apart from this, add 1 cup of water and 1 cup of whisked curd. If you want a thicker gravy, add less water.
  7. While keeping the flame low, stir the curd well.
  8. Keep the flame low, else there are chances of curd curdling.
  9. Now roast 3/4 papads on fire or in microwave.
  10. Break the roasted papad into the curry. Mix well.
  11. Also add tsp salt. (Note, because papad contains salt)
  12. Boil for 2 minutes or more.
  13. furthermore, add tsp garam masala, 1 tsp kasoori methi and 2 tbsp coriander leaves. Mix well.
  14. finally, enjoy dahi papad curry with chapati/roti or bajra roti.
