Material

  1. For Kadhi:
  2. 1 cup curd (sour)
  3. 1/4 cup gram flour/gram flour
  4. 1/2 tsp turmeric
  5. 1/2 tsp kashmiri red chili powder
  6. 3 cups water
  7. 1 green chili (slit)
  8. 3/4 tsp salt
  9. 2 tbsp coriander (finely chopped)

For tempering:

    1. 2 tbsp oil
    2. 1 tsp mustard
    3. 1/2 tsp cumin
    4. 1/4 tsp fenugreek
    5. a pinch of asafoetida
    6. some curry leaves
    7. 2 dried red chilies
    8. 1/4 tsp turmeric
    9. 1/4 tsp kashmiri red chili powder

Instruction

  • firstly, in a large mixing bowl take 1 cup sour curd and cup besan.
  • Also add tsp turmeric and tsp chili powder.
  • Whisk smooth making sure the besan combines well with the curd without any lumps.
  • Additionally add 3 cups of water and whisk well.
  • Keeping the flame low, pour the besan mixture into a large pan.
  • Keeping the heat low, stir for 5 minutes or until the mixture starts to boil. Otherwise the curd may burst.
  • After the curry comes to a boil, add 1 green chili and tsp salt. Mix well.
  • Continue to boil on a medium flame for 15-20 minutes, while stirring occasionally.
  • After boiling well, the raw smell of the curry disappears and becomes slightly thick.
  • Now prepare the tempering by heating 2 tbsp oil.
  • Once the oil is hot, add 1 tsp mustard, tsp cumin, tsp fenugreek, a pinch of asafoetida, some curry leaves and 2 dried red chillies.
  • Also add tsp turmeric and tsp chili powder. Stir till the tempering breaks down.
  • Now pour the tempering over the curry.
  • Also add 2 tbsp green coriander and mix well.
  • finally serve curd curry with hot steamed rice or roti.
