- Boiled potatoes = kg
- Carrot = cup grated
- Capsicum = 2 tbsp finely chopped
- Maida = cup
- Bread Crumbs = cup
- Red chili powder = tsp
- jeera powder = 1 tsp
- Turmeric Powder = tsp
- Chaat masala = tsp
- salt = as per taste
- Finely chop both ginger and garlic = tbsp
- Green chili = 1 tbsp finely chopped
- Green coriander = 2 tbsp finely chopped
- Oil = for deep frying
- to make gravy
- Jeera = 1 tsp
- Green cardamom = 2
- Cloves = 3 to 4
- Cinnamon = inch piece
- Garlic = 4 to 5 buds
- Ginger = 1 inch piece cut coarsely
- Cashews = 8 to 10
- Onion = 1 big size cut into thin slices
- Tomato puree = cup
- Turmeric Powder = tsp
- Red chili powder = 1 tsp
- Coriander powder = tbsp
- Garam masala powder = 1 tsp
- salt = as per taste
- curd = 1 cup
- Green coriander = little finely chopped
- oil = as needed
Method - How to make vegetable kofta
To make vegetable koftas, first you have to make koftas and to make koftas, take a bowl and grate all the boiled potatoes one by one in it. After the potatoes are grated, add capsicum and grated carrots to it.
Then in the bowl add finely chopped ginger and garlic, cumin powder, chaat masala, salt as per taste, turmeric powder, red chili powder, green chili, green coriander, then flour and bread crumbs and mix them all well by hand. Do it Your kofta mixture is ready.

Make all the koftas in the same way and now put oil in a pan to fry them and keep them for heating. When the oil becomes hot, then put the koftas in it and fry the koftas on medium to low flame, turning them again and again till they get golden color.
When the koftas are fried, then take them out from the oil and keep them in a plate and in this way fry the rest of the koftas as well. Your koftas are ready. Then make gravy for kofta and heat it by adding 5 tbsp oil in a pan to make gravy.
As soon as the oil becomes hot. You put the onion in the oil and fry the onion till it turns golden brown. Once the onion is fried, take it out in a plate. Then put cashew, ginger and garlic buds in this remaining oil and fry them for a minute. (If there is no oil left after frying the onions. Then you can add a tablespoon of oil and then fry cashews, ginger and garlic.)
After a minute, switch off the gas and take out the cashew, garlic and ginger from the oil. Then take a mixer jar and put golden brown onions, fried cashews, garlic and ginger in the jar and grind them coarsely. After that put curd in the jar and now make a very smooth paste and take it out in a bowl.
Now put 4 to 5 tbsp oil in a pan to make gravy and keep it for heating. Then put cumin seeds, green cardamom, cloves and cinnamon pieces in hot oil and let the cumin crackle slightly. Then add tomato puree to it and mix. Fry the tomato puree for two minutes.
After that add coriander powder, red chili powder, turmeric powder, salt and garam masala powder to the tomato puree and mix. After that fry the spices till the oil separates. When the oil starts separating you from the spices. Then add the paste of onion, cashew and curd that you have made in it and mix it (the taste of gravy is very good by adding cashew nuts) and now fry the paste till the oil is separated.
When the oil is separated, add a cup of water and mix it. Then let the gravy come to a boil and then cover the pan and cook it on low flame for 10 minutes. So that the gravy becomes thick. After 10 minutes, add green coriander and mix it and now by increasing the flame, cook the gravy a little more. Due to which the oil started appearing above the gravy. Then switch off the gas.
Your koftas and gravy are both ready. Now place all the koftas in a serving bowl for plating and pour the gravy over the kofta. In this way your very tasty vegetable koftas are ready.
