i have prepared authentic hyderabadi biryani recipe and simple veg biryani recipe. however i wanted to share a quick and easy biryani recipe and hence i thought of sharing vegetable biryani recipe in pressure cooker. whenever i have an intense craving for biryani rice recipe, i usually follow this recipe. apart from this i mix and match vegetables and i also use broccoli, paneer and baby potatoes for my cooker biryani recipe. Veg biryani in cooker is a perfect addition to the lunch box, especially if you prepare it the previous night or early in the morning. It tastes amazing with mirchi ka salan or bhindi ka salan recipe.


furthermore, some important tips and tricks for a fragrant and spicy cooker veg biryani recipe. firstly, always soak basmati rice for 30-45 minutes before cooking it in pressure cooker. Not only does this help speed up the cooking process, it also ensures the rice and vegetables cook evenly. alternatively, you can also add almost cooked basmati rice and layer it on top of the gravy and simmer in pressure cooker for 10 minutes. finally, you can marinate the vegetables in curd for 30 minutes with dry spice powder as mentioned below in the recipe card.

      1. 3 tbsp ghee
      2. 2 bay leaves / bay leaves
      3. 2 inches cinnamon
      4. 1 star anise
      5. 5 cloves
      6. 4 cardamom
      7. 1/2 tsp black pepper
      8. 1/2 tsp cumin
      9. 1 medium onion (finely chopped)
      10. 1 tsp ginger-garlic paste
      11. 5 beans (chopped)
      12. 10 florets gobi / cauliflower
      13. 1/4 cup peas
      14. 1 carrot (chopped)
      15. 1 potato (cubed)
      16. 3 mushrooms (sliced)
      17. 1 cup curd
      18. 1/2 tsp turmeric
      19. 1 tsp Kashmiri chili powder
      20. 1/4 tsp cumin powder
      21. 2 tsp biryani masala
      22. salt to taste
      23. 6 tbsp coriander leaves (finely chopped)
      24. 20 mint leaves (roughly chopped)
      25. 6 tbsp Onion (Fried)
      26. 1½ cups basmati rice (soaked 30 minutes)
      27. 2 tbsp saffron water
      28. 2 cups water

Instruction

  • firstly, in a large cooker heat 2 tbsp ghee.
  • Fry 2 bay leaves, 2 inches cinnamon, 1 star anise, 5 cloves, 4 cardamom, tsp black pepper and tsp cumin on low flame.
  • furthermore, fry the chopped onions till golden brown.
  • Also add 1 tsp ginger-garlic paste and fry well.
  • Additionally, add mixed vegetables like beans, gobi, peas, carrots, potatoes and mushrooms.
  • Fry till all the vegetables shrink.
  • Now put curd in it keeping it on low flame.
  • Also add tsp turmeric, 1 tsp chilli powder, tsp cumin powder, 2 tsp biryani masala and salt as per taste.
  • Keeping the flame low, mix well till all the spices are well blended.
  • Also add 3 tbsp coriander leaves and 10 mint leaves.
  • additionally add 2 tbsp fried onions.
  • Spread 1½ cups soaked basmati rice. Soak basmati rice for 30 minutes.
  • Further sprinkle biryani masala powder and salt.
  • Also add coriander leaves, mint and fried onions to it.
  • additionally, add 2 tbsp saffron water. To prepare saffron water, soak a few strands of saffron in hot water.
  • furthermore, spread 1 tbsp ghee.
  • and pour 2 cups of water from the side of the cooker without disturbing the layers.
  • Cover the cooker and simmer for 25 minutes or till the rice is cooked.
  • finally, serve veg biryani prepared in cooker with raita.
