A 1-cup ramekin or oven  buy now-safe mug is a perfect size for these mixed baked oats, and there are many possible variations. The basic formula is made with bananas sweetened with maple syrup or honey. The banana sweetens the mixture a bit more, and there's no banana flavor at all. If you prefer uncooked oats without banana, you can replace it with 1/4 cup apple chutney or any other banana substitute.

  • 1 tablespoon honey, or maple syrup
  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 1 pinch salt
  • 1/4 cup ripe mashed banana
  • 2 Tbsp mini chocolate chips
  • 1/2 teaspoon cinnamon sugar, or demerara sugar, optional



The oat mixture is mixed to form a smooth batter, so the oatmeal has a cake-like texture. In addition to enjoying cake for breakfast, mixed baked oats are whole grain and gluten free!

A standard-sized high-speed blender works well for making 2 or more servings, but for 1 serving, your best bet is a small bullet-style blender or Immersion blender.

02. Place a rack in the center of the oven  buy now and preheat to 350 F. Spray 8-ounce ramekin or oven-safe mug with cooking spray.

03. Combine egg, milk, sweetener, oats, baking powder, salt and banana in a blender. Alternatively, if using an immersion blender, mix in a bowl. Whisk the oat mixture until smooth.

04. Pour the mixed oat mixture into a ramekin or mug and stir about 1 teaspoon mini chocolate chips into the batter.

05. Top with remaining 1 teaspoon mini chocolate chips and cinnamon sugar, if using. Bake the mixed oats for about 20 to 25 minutes, or until a toothpick inserted in the center comes out with only a few crumbs.

Advice

A serving blender is the best option for making a single serving.
Be sure to spray the ramekin with cooking spray or grease it with oil or butter.
Over-baking the oats will dry out the oats. Stick to about 20 to 22 minutes for 8-ounce ramekins or about 15 to 17 minutes for 6-ounce ramekins.
If you don't have a blender, you can use oat flour to make baked oats. Alternatively, use a food processor to grind the rolled oats into a smooth dough. Using oat flour, make batter with whisk or electric mixer.


Recipe Variations

Chocolate-Chocolate Chip: Combine 1 Tbsp unsweetened cocoa powder in a blender

Blueberry Lemon: Add 1/4 tsp grated lemon zest to blender. Omit the chocolate chips, add about 8 to 12 blueberries to the ramekin batter, and sprinkle a few more blueberries on top

Cinnamon Berry: Add 1/2 teaspoon ground cinnamon to a blender. Omit the chocolate chips and add some sliced ​​strawberries or whole blueberries or raspberries to the ramekin batter and top with some more sliced ​​berries. Sprinkle with cinnamon sugar and bake as directed.

Pumpkin Pecans: Omit the banana and chocolate chips. Mix additional 1 Tbsp maple syrup, 1 Tbsp brown sugar, 1/4 cup canned pumpkin, 1/4 tsp cinnamon, nutmeg, 1/4 tsp vanilla and 3 Tbsp milk. Swirl about 2 tablespoons finely chopped pecans into ramekins and top with one teaspoon chopped pecans and 1/2 teaspoon cinnamon sugar—bake as directed.

With jam: Swirl 1 to 2 tablespoons jam or preserve in batter in ramekins. Top with mini chocolate chips or berries.

Vegan Baked Oats: Use egg substitutes or flax "eggs". In a small bowl, mix 1 tablespoon flaxseed meal with 3 tablespoons water. Put the mixture in the fridge for 15 minutes, pour into the blender and proceed with the recipe. Use vegan chocolate chips or a berry or chopped fruit mix.

To make baked oats without bananas, replace it with about 1/4 cup of apple sauce.

Some alternative topping ideas include toasted coconut, caramel or chocolate sauce, sugar-free syrup or fruit syrup, whipped topping, vanilla or plain yogurt, chopped toasted nuts, or demerara sugar.

If you make a large batch and have leftovers, cover the ramekins and refrigerate them for up to 3 days.
Reheat in microwave until heated through, about 1 to 1 1/2 minutes.
