Ingredients Required – ingredients for Anda Thoku

      • Boil eggs = 5
      • Cinnamon = 1 inch piece
      • fennel = tsp
      • Curry leaves = 8 to 10
      • Green chili = 3 to 4 finely chopped
      • Ginger-garlic paste = 1 tsp
      • Onion = 1 medium sized finely chopped
      • Tomatoes = 2 medium sized finely chopped
      • Turmeric Powder = 1/3 tsp
      • Red chili powder = 1 tsp
      • Coriander Powder = 1 tsp
      • salt = as per taste
      • Green coriander = one to two tbsp chopped
      • oil = cup


Method - How to make anda Egg Thoku

To make Egg Thokku, first put the pan on the gas and then put oil in it and keep it for heating. As soon as the oil is hot, put fennel, cinnamon and green chilies in it and then add onions to it. (You can also take onion by cutting it into thin slices instead of finely chopping it. The way you like. Cut or chop the onion in that way.)


Add the onion, mix it with the spatula and fry the onion till it becomes light pink. You do not have to make the color of the onion golden, keep in mind that the onion is neither light golden nor dark golden, fry the onion only till it becomes light pink.


After the onion turns pink, add curry leaves and mix it. After that add ginger-garlic paste and mix it. Then add red chili powder, (you can add more or less red chili powder according to your taste.) After adding coriander powder and turmeric powder, add salt and mix.


To fry the spices, add a little water to it and fry the spices. Due to which the oil started separating from the spices. The masala does not burn by adding water and frying. So add little water and fry the spices.


After the masala is roasted, add tomatoes to it and mix. (In place of fine tomatoes, you can also grind tomatoes and add its paste.) After adding tomatoes, cook it till it becomes soft. To make the tomatoes soft quickly, cover the pan and cook till the tomatoes become soft. Till the tomatoes are getting soft, cut the boiled eggs and keep them aside. Take a boiled egg and cut it into four slices. Similarly cut the rest of the eggs into slices and keep them.


When the tomatoes become soft and the oil starts separating from the spices again, then mix the tomatoes well. So that the tomatoes get mashed. Now to keep some gravy in it, add a quarter cup of water and mix it and cover the pan and let it cook for one to one and a half minutes.


After one to one and a half minutes, remove the lid of the pan and stir the gravy and after that add the boiled eggs which you have cut into slices, add the slices of that egg and mix it very lightly. Keep in mind that the yolk should not come out from the egg slices. Therefore, mix the eggs in the gravy with a very light hand.


After that add finely chopped green coriander to it and let the pan cook for one to one and a half minutes covering the cover. Then switch off the gas. Your Egg Thokku is ready. Which you can enjoy with naan, kulcha, pav or roti, paratha.
