Material

  • 1 pound 85% lean hamburger 
  • 1/4 cup grated onion (from 1 small onion)
  • 2 tablespoons roasted, peeled, and chopped hatch chiles (from fresh or thawed frozen peppers)
  • 1 teaspoon kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil , divided
  • 8 white American cheese slices
  • 4 brioche hamburger buns, split
  • 1/4 cup unsalted butter, melted
  • 6 tablespoons mayonnaise
  • 6 Tbsp Hatch Chili Salsa

Guidance


Step 01

Using your hands, mix beef, onion, chili, salt and pepper during a large bowl until evenly incorporated. Shape into 8 (2 1/2-ounce) balls.

Step 02

Heat an outsized cast iron skillet or griddle until smoking. Add 2 tbsp oil. Add 4 meatballs, and immediately flatten with a sturdy, wide spatula to 1/4-inch-thickness. Cook until bottoms are crisp and dark brown in color, about 1 minute. Step 03

Preheat broiler with oven rack 5 to six inches from heat. haircut sides of buns with butter. Arrange buns, cut side up, on baking sheet. Roast in preheated oven until toasted, 1 to 2 minutes. Spread each bottom bun half with 1 1/2 Tbsp mayonnaise, top with 2 patties, and top with 1 1/2 Tbsp Hatch Chili Salsa. Cover with the highest portions of the bun and serve immediately.
